Mango-Cardamom Muffins

Ingredients

  • 2 cups flour
  • 2/3 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cardamom
  • 1 cup mango, chopped
  • 3/4 cup lowfat buttermilk
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla
  • 1 egg
  • 2 tablespoons sugar

Preparation

Step 1

1. Heat oven to 400.

2. Combine flour-cardamom, make a well in the center of mixture.

3. Combine buttermilk-egg, add to flour, stirring just until moist. Spoon into 12 sprayed muffin cups, sprinkle with sugar.

4. Bake 23 mins, or until muffins spring back when touched. Remove from pan to racks to cool.
