Mexican-Style Rustic Tomato Stock

Ingredients

  • 1 small red or yellow onion, minced
  • 1 tablespoon minced garlic
  • 1 tablespoon minced chipotle in adobo
  • Olive oil
  • 3 cups crushed canned tomatoes
  • 3 cups water
  • 1 pinch epazote or dried oregano (or a combination)

Preparation

Step 1

1. Sauté 1 small minced red or yellow onion, 1 tablespoon minced garlic and 1 tablespoon minced chipotle in adobo in olive oil until fragrant.

2. Add 3 cups crushed canned tomatoes, 3 cups water and a pinch of epazote or dried oregano, or both.

3. Bring to a boil, simmer for 5 to 15 minutes.
