sweet potato and black bean chili

Ingredients

  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • 3 tbsp Western Family Organics tomato paste
  • 2 cups Longo’s tomato and basil pasta sauce
  • 3/4 cup vegetable broth
  • 3 sweet potatoes, peeled and cubed
  • (about 3 lbs)
  • 2 orange peppers, chopped
  • 2 cans (19 oz each) Western Family black beans,
  • drained and rinsed

Preparation

Step 1

In slow cooker, stir together onion, garlic, chili powder and cumin. Whisk tomato paste into pasta sauce and stock. Pour into slow cooker. Add sweet potatoes, peppers and beans; stir to combine. Cover and cook on

Low for 4 to 6 hours or on High for 3 to 4 hours. Season
with salt and pepper to taste.
