Apple Toffee Turnovers

Ingredients

  • 1 ½ c peeled and grated granny smith apples
  • 3 tsp lemon juice
  • 1/3 c light brown sugar
  • 1 tsp cinnamon
  • 1 pkg frozen puff pastry thawed
  • 3 ./4 c toffee bites
  • 1 egg mixed with tsp water

Preparation

Step 1

1. Preheat oven to 375 and line a baking tray with parchment paper – toss the grated apple with the lemon juice and let it sit for 5 mins.
2. Squeeze out the excess juice and toss the apples with the brown sugar and the cinnamon.
3. On a lightly floured surface – roll out your puff pastry into a rectangle approx. 18 x 12. Cut the dough into 3 in squares.
4. Spoon a little apple filling in the center of each square and top with toffee bites. Brush the edges of the pastry with the egg wash and fold over to create a triangle.
5. Brush the top of each turnover with a bit of the egg wash and bake for 20 – 25 mins until puffed and golden brown.
