Ingredients

  • 1 (8-1/2 oz.) pkg Jiffy Corn Muffin Mix and enough Self-Rising Cornmeal Mix (any brand you like) to measure 2-1/4 cups together
  • 1/8 cup sugar
  • 1/2 tsp. baking soda
  • 1 ⁄3 cup sweet onion, chopped fine
  • 1/2 cup buttermilk
  • 1 egg, beaten

Step 1


Combine all ingredients; mix just until moistened.
Drop batter by tablespoonfuls into hot oil (370°). Turn when golden brown and fry on other side till golden.
Remove with slotted utensil and drain on paper towels.
