Cinnamon Muffin in a Mug(egg-free/DF/GF)~THM-S

Ingredients

  • 3 Tablespoons Golden Flax Meal
  • 1 Tablespoon protein powder of choice (I used Nutribiotics brown rice protein powder)
  • 2 teaspoons Trim Healthy Mama Sweet Blend
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon cinnamon (or to taste)
  • pinch of salt
  • 1 chia egg (3T hot water mixed with 1 T chia seeds, let set until gelled)
  • 1 Tablespoon coconut oil

Preparation

Step 1

I begin by making my chia egg...while the water is hot, I usually get my tea going too. While the egg is gelling, I add a Tablespoon of coconut oil to my cute little ramekin.

When the "egg" is gelled, I pour it on top of the oil and mix, melting the oil and combining.

I then add all the rest of the ingredient and mix very well with a fork. I make sure to gently pat the top flat before I bake.

Pop it in the microwave for 1:20, your time may vary, but it should spring back when touched on top and not sink.

Note: If I were to do this in the oven, I would bake at 350 for about 15-20 minutes. Ive never tried it...if you do I would be curious as to your results! :)
