Chicken with mango and ginger in parchment

Ingredients

  • 1 large mango, peeled, pitted and cut into 1/4" wedges
  • 8 chicken cutlets (about 1 3/4 lb)
  • 1 piece fresh ginger (1")peeled and cut into matchsticks
  • 1/3 cup gresh cilantro leaves
  • 1 med. jalapeno, thinly sliced
  • salt and pepper
  • 2 Tbsp. plus 2 tea. extra-virgin olive oil
  • lime wedges, for serving

Preparation

Step 1

Preheat over to 400 degrees.

Place mango wedges in center of 4 18" long pieces of parchment. TOp with chicken, ginger, cilantro, and jalapeno. Season with salt and peppr and drizzle each with 2 tea. oil.

Fold parchment over chicken and twist ends to tightly seal.

Place pakcets on a rimmed baking sheet and bake until packets are puffed up and chicken is cooked through (18-20 mins).

Serve with lime wedges.
