Ingredients
- 2 Cups cooked pasta (strozzapreti or penne pasta work well)
- Sauce
- 4-5 large basil leaves, torn
- 1 Spanish onion, thinly sliced
- 1 clove garlic, crushed
- 3-4 slices of salami, sliced into strips
- 1 Cup medium style extra virgin olive oil
- 1 cup pitted kalamata olives
- 1 small chili, finely sliced
- 2 anchovy fillets, shredded
- Parmesan cheese
- Black pepper
Preparation
Step 1
Warm the olive oil over medium heat in a large saucepan. Add the garlic, chili, onion and anchovy to the pan. Let sit until the onion is soft (five minutes or so). Add the olives and salami and heat through. Toss in the cooked pasta and coat well. Take off heat and add basil. Top each serving with parmesan and cracked black pepper.
