Ingredients
- 1 teaspoon cornstarch
- 1/3 cup chicken broth
- 2 (4-ounces each) boneless pork loin chops
- 1 teaspoon canola oil
- 1 small apple, peeled and thinly sliced
- 1/4 cup onion, finely chopped
- 3 tablespoons unsweetened apple juice
- 1 teaspoon Dijon mustard
- 1/8 teaspoon dried thyme

Preparation
Step 1
In a small bowl, combine cornstarch and broth; set aside.
In a large skillet, brown pork chops in oil. Remove and keep warm.
In the same skillet, saute apple and onion until apple is crisp-tender. Stir in the broth mixture, apple juice, mustard and thyme; bring to a boil. Add pork chops. Reduce heat; cover and simmer for 8-10 minutes or until a meat thermometer reads 160°.
