  • 1 can (16 oz.) whole kernel corn, undrained
  • 1/3 cup evaporated milk
  • 2 eggs, beaten
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/8 teaspoon nutmeg
  • vegetable oil

Step 1

Drain corn, reserving liquid; set aside. Add enough corn liquid to milk to equal 1/2 cup. Combine milk mixture and eggs; mix well. Combine dry ingredients; gradually add to milk mixture, stirring until smooth. Stir in corn. Heat 1/4" deep oil in large skillet to about 350 degrees. Drop in corn mixture by heaping teaspoonfuls; cook only a few at a time, turning once. Fry 3 - 5 minutes or until fritters are golden brown. Drain on paper towels and serve immediately. Dust with powdered sugar, if desired.
