Date Macaroon Cream

Ingredients
- 1 cup dates
- 1/3 cup milk
- 3 egg yolks
- 1/4 cup sugar
- 1/2 cup crumbled macaroons
- 1/4 cup slivered almonds
- 1 cup whipping cream
- 1 tsp. vanilla
- 1 tbsp. brandy, optional

Step 1
Snip dates along one side with kitchen scissors; flip out pits. Slice dates crosswise. Heat milk. Beat egg yolks with sugar; stir into hot milk. Cook about 5 minutes over low heat, stirring constantly, until slightly thickened. Cool.
Stir in macaroons, almonds and dates. Whip cream and fold, along with flavourings, into egg yolk mixture.
Turn into refrigerator tray and chill, but do not freeze firm.
Makes 5 or 6 servings.
