Low Carb Baked Spaghetti Squash with Garlic Sage Cream

Ingredients

  • 2 1/2 lbs spaghetti squash
  • 3/4 cup heavy cream
  • 1 clove garlic, minced
  • 3 tsp fresh sage, or 1/2 tsp dried
  • 1/4 cup parmesan cheese
  • Salt and pepper

Preparation

Step 1

1. Heat oven to 400.

2. Prick squash and bake until tender, about 45 mins. Cool slightly, halve and scoop out seeds. Pull out squash strands with a fork and transfer to a warm bowl.

3. While squash bakes, heat cream, garlic, and sage in a medium pan. Cook until cream is thick enough to coat the back of a spoon, about 10 mins.

4. Pour over squash, toss to combine. Season and sprinkle with cheese. Serve immediately.

Great stuff. Made this with fat free half and half and dried sage. It's delicious and we'll have it again soon. Really liked the squash/sage combination. I also increased the garlic by alot, which I'd do again.
