Ingredients
- 1 cup Sugar
- 6 tbsp Sugar
- 2 cups Milk
- 1 cup 35% Whipping Creme
- 1 tbsp Vanilla
- Pinch Salt
- 8 Egg Yolks
Preparation
Step 1
1. Preheat oven to 325
2. Make caramel ( 1 cup sugar + 1/2 cup water) in large sauce pan boil without stirring, let boil for 5 minutes until yellow. Then gently swirl pot until mix is even golden. NOT BROWN. Take off heat and quickly add (once all combined into a mixing bowl) Milk, cream, vanilla, salt. Then whisk to incorporate.
3. Whisk eggs then slowly add caramel, a little at a time, whisking constantly.
4. Pour into 6 remekins and bake in a hot water bath in the oven for 30 minutes or until edges are set and middle is jiggly
5. Just prior to serving sprinkle with remaining sugar and blow torch.
