If the guests are local, do a potluck. Your vegetarian guests can bring food that they can eat and share. If they can’t cook, pasta with marinara sauce (meat-free tomato sauce) is filling and delicious for everyone.
For houseguests, do a buffet. They always can eat salad, bread, vegetables and often dessert. One or two meat-free meals won’t kill anyone, and if you like, you can put a few veggie burgers in the freezer to substitute for a meat entree.
