Ingredients
- 2 Tbsp. vegetable oil
- 1 pound ground chuck
- Salt
- 2/3 cup finely chopped onion
- 1 Tbsp. red wine vinegar
- Freshly ground pepper
- 4 hamburger buns, warmed for a few seconds in the microwave
- 4 slices American cheese
- Pickle chips
- Prepared yellow mustard (optional)
Preparation
Step 1
Heat the oil in a large, heavy cast-iron skillet over medium heat. Add the ground beef and use a spatula and/or a wooden spoon to press and worry it into very small bits. As you are worrying the meat, add 1 Tbsp. salt and the onion. When the meat is light brown, drain off any excess fat; then stir in the vinegar and pepper. Add enough water to nearly cover the meat. Simmer, uncovered, stirring occasionally, for 15 to 20 minutes. The water should be boiled off, but if it isn't, use a slotted spoon to transfer the meat from the pan to a bowl. The meat should be slightly moist but not drippy.
Scoop one fourth of the warm beef mixture onto the bottom of each warmed bun. Add the cheese, which will semimelt from the meat's heat. Place pickle chips atop the cheese and apply mustard to the top of the bun, if desired. Place the tops over the cheese and serve immediately.
