Ingredients

  • 1/3 cup mayonnaise
  • 2 tablespoons finely-chopped fresh basil (or 2 tspns dried basil)
  • 8 slices Atkins white bread lightly toasted
  • 1 1/4 pounds sliced turkey breast
  • 1 cup watercress leaves
  • 12 slices bacon cooked until crisp
  • 2 plum tomatoes thinly sliced

Step 1

Mix mayonnaise with basil. Spread on bread slices.

Top 4 bread slices with a quarter of the turkey, a quarter of the watercress, three slices bacon and a quarter of the tomato slices. Top with remaining four slices bread. Cut each sandwich in half on the diagonal.
