Oatmeal Toffee Cookies

Ingredients

  • 1 cup butter, softened
  • 2 cups packed light brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • 1 3/4 cups flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 3 cups quick-cooking oats
  • 1 1/3 cups (8oz pkg) toffee bits
  • 1 cup sweetened coconut flakes, optional

Preparation

Step 1

1. Preheat oven to 375F. Lightly grease cookie sheets.

2. Beat the butter, brown sugar, eggs and vanilla using an electric mixer on medium speed in a large bowl until well blended. Add the flour, baking soda, cinnamon and the salt beating until blended. Stir in the oats, toffee bits and the coconut using a wooden spoon.

3. Drop the dough by rounded teaspoons about 2" apart onto prepared cookie sheets. Bake for 8-10 mins or until the edges are lightly browned. Cook for 1 min. Remove to wire rack to cool completely.
