crepes - COCONUT FLOUR CREPES (sweet or savory)

  • 5 large eggs
  • 1 c. coconut milk
  • 2 tsp. olive oil
  • 1/2 c. coconut flour
  • 1/3 c. tapioca flour
  • 2 Tbsp. honey (optional)
  • 1/8 tsp. sea salt
  • oil for cooking

Step 1

Place eggs, coconut milk, olive oil, coconut flour, tapioca starch, honey and sea salt in a blender.
Heat approx. 1 Tbsp. of cooking oil in a 6"-8" skillet over medium heat.
Pour batter into hot skillet ¼ cup at a time, rotating (or swishing) the batter in a circular motion, covering the pan.
Cook until you can flip the crepe onto the other side without tearing it, approximately 1 minute
Flip and cook the other side for 1 minute (at the most)
Set aside
Repeat until the batter is used
