Ingredients

  • 1 tablespoon olive oil
  • 12 ounces cooked andouille sausage cut 1/4"-thk slices
  • 2 onions thinly sliced
  • 2 bell peppers (any color) seeded, and cut into 2" by 1/4" strips
  • 8 ounces Atkins Pasta Cuts penne
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly-ground black pepper

Step 1

In a large skillet heat oil over medium-low heat. Add sausage and cook 5 minutes, until browned. With a slotted spoon, transfer sausage to a bowl.

Add onions to skillet; cook 5 minutes, until lightly golden. Add peppers and cook 12 minutes, or until tender. Meanwhile, cook pasta according to package directions. Drain and keep warm.

Add 1/2 cup water, salt, pepper and reserved sausage to skillet. Stir well; toss pepper mixture with pasta.

This recipe yields 4 servings.
