Ingredients
- 2 TBL butter
- 1 sm. onion, chopped
- 1 can (14-1/2oz) chicken broth
- 1 C 2% milk
- 1 pkg (10oz) frozen broccoli florets, thawed
- grd. black pepper
- 1/2 C shredded cheddar cheese, abt. 2oz
Preparation
Step 1
melt butter in 4-qt saucepot & cook onion, stirring occassionally - 5 min or until tender\
stir in broth & milk
bring to boil over high heat
add broccoli
reduce heat to low & simmer 5 min or until broccoli is tender
process soup, in batches, in blender until smooth
return soup to saucepot
season w/ pepper & heat through
remove from heat
stir in cheese until melted
garnish, if desired w/ additional cheese
