East-West Chicken

Ingredients

  • 6 chicken thighs
  • 6 chicken legs
  • 1 jar (abt 12oz) pineapple/apricot preserves
  • 2 can (abt 16oz) coconut milk
  • sprinkle of powdered ginger, optional
  • pineapple pieces (abt 15 oz) optional

Preparation

Step 1

preheat oven to 350

spread one TBL preserves on each side of each piece o chicken

place in pyrex baking dish

fruit can be placed in dish around chicken
cover w/ coconut milk
ginger can be sprinkled lightly on top

bake 1 hr or until chicken skin is light brown (if using skinless chicken will have touch of browning)

serve over brown rice & drizzle w/ coconut milk
