Creamettes and Tomato Soup

Ingredients

  • 1 box Quinoa Elbow Pasta
  • 1/2 lb Turkey Bacon – diced 1/2”
  • 2 tbsp EVOO
  • 1/4 cup White Onion diced 1/2”
  • 2 tsp Minced Garlic
  • 2- 15oz cans No Salt Tomato Sauce
  • 1- 15oz can No Salt Diced Tomatoes
  • 25 floz Unsalted Chicken Stock
  • 2 tsp Fresh Basil chopped fine
  • 1/2 tsp Coarse Black Pepper
  • Pink Himalayan Sea Salt (not pictured)

Preparation

Step 1

I large pot, sautee Turkey Bacon in EVOO until it just starts to crisp. Add Onion and Garlic and continue to sautee until Onions are clear. Add Tomato Sauce, Tomatoes, Chicken Stock, Basil and Black Pepper. Simmer 20 min. Add Sea Salt to taste. Pour over cooked pasta and garnish with more fresh basil if desired.

This is for Ignite or Thrive as is. We are well into Thrive so we added a little healthy shredded Mozzarella on top. The bowl in the picture is our 15yr old's portion, so adjust your portion as needed… LOL. Enjoy!
