DRESSING/STUFFING

Ingredients

  • Corn Bread:
  • 1 C corn mean ( or 1 1/2)
  • 1/2 C flour
  • 1 TBL baking powder
  • 1 TBL sugar
  • 1 tsp salt
  • 1 C milk (if too stiff add extra)
  • 1 egg
  • STUFFING:
  • 1 lg. pkg white bread stuffing mix
  • 2 chopped onions
  • butter
  • celery

Preparation

Step 1

1. take insides from turkey - put in pot w/ 3C water & onion & salt

cook w/ cover abt 1-2Hrs
let cool

2. make cornbread
--mix all ingredients together
mix in 1 TBL wesson oil
--put 1 TBL oil in pan
heat pan
add corn bread mixture
25 min @450

3 crumble corn bread

4. mix corn bread & stuffing mix. together

5. fry 2 chopped onions in butter & 1 celery

6. mix onions into bread mixture

7. cut up meat from neck, gizzards, etc
add to bread mixture
also add liquid from mead cookings (add water to make 2C)

8 season:
1/2 tsp sage
S & P

TO STUFF TURKEY"
1. inside turkey
stuff loosely (so can breathe)
close w/ pins - do not tie
bring legs together & tie criss crossed together

2. neck - inside skin
fold over skin on neck
stuff
fold back underneath turkey & pin w/ 1 pin
