Muffins-Apple Cinnamon Muffins

Ingredients

  • Topping:
  • 1 1/2 cups Flour
  • 1/2 cup Sugar
  • 1 3/4 tsp. Baking Powder
  • 1/2 tsp. Salt
  • 1/2 tsp. Cinnamon
  • 1/8 tsp. Nutmeg
  • 1 Egg
  • 1/2 cup Milk
  • 3 tbsp. Vegetable or Canola Oil
  • 3 tbsp. Apple Sauce
  • 1 Medium Tart Apple, peeled & chopped
  • 1/4 cup Brown Sugar, packed
  • 1 tbsp Flour
  • 2 tbsp. Butter, cold
  • 1/2 cup Old Fashioned Oatmeal

Preparation

Step 1

Preheat oven to 400 degrees. Combine the first six ingredients. Add egg, milk, oil and applesauce and stir until just moistened. Fold in apple. Fill paper-lined muffin cups 2/3 full. For topping, combine brown sugar and 1 tbsp. flour. Cut in butter until crumbly. Stir in oats. Sprinkle over muffins. Bake 18 to 22 minutes or until toothpick comes out clean. Cool 5 min. before removing from pan to wire cooling rack.
