CARROT CAKE

Ingredients

  • FROSTING:
  • 1 C crushed pineapple (drained)
  • 2 C grated carrots
  • 1 C coconut
  • 1/2 C walnuts
  • 1 1/4 C salad oil
  • 2 tsp cinnamon
  • 2 C sugar
  • 4 eggs - beaten
  • 2 C flour
  • 1/2 tsp salt
  • 1 tsp soda
  • 2 tsp baking powder
  • 2 C powdered sugar
  • 1/4 C butter
  • 3 oz cream cheese
  • 1 tsp vanilla
  • 1 TBL milk

Preparation

Step 1

mix all of cake ingredients together

pour int greased & floured 9x13" pan
bake @350 abt. 50 min. (check @ 35 min)

Frosting:
mix all ingredients until smooth
