STRAWBERRY-RHUBARB ICE POPS

Ingredients
- 3 cups chopped fresh rhubarb (1/2" pieces)
- 1/4 sugar
- 3 tbsp. water
- 1 carton strawberry yogurt
- 1/2 c. unsweetened applesauce
- 1/4 c. finely chopped fresh strawberries
- 2 drops red food coloring

Preparation
Step 1
In a large saucepan, bring the rhubarb, sugar and water to a boil. Reduce heat: simmer, uncovered for 10-15 minutes or until mixture is blended and thick. Cool. Set aside 3/4 c. (save the remaining rhubarb for another use).
In a large bowl, combine the yogurt, applesauce, strawberries, reserved rhubarb mixture and food coloring. Fill molds or cups with about 1/4 c. fruit mixture; top with holders or insert a popsicle stick into each cup. Freeze.
