BEEF TENDERLOIN WITH FRENCH FRIES AND COLESLAW

Ingredients

  • ◾2 Tbsp margarine
  • ◾3 3 oz. beef tenderloins medallions
  • ◾2 tsp salt
  • ◾2 tsp black peppercorns
  • ◾1/2 cup mushrooms, sliced
  • ◾3 Tbsp onions, chopped
  • ◾1 Tbsp dijon mustard
  • ◾1 tsp Worcestershire sauce
  • ◾1 Cup vegetable stock
  • ◾3 potatoes, peeled and cut into sticks
  • ◾vegetable oil
  • ◾salt
  • ◾1 cup cabbage, shredded
  • ◾1 cup red cabbage, shredded
  • ◾1/3 cup carrot, shredded
  • ◾1/3 cup mayonnaise
  • ◾4 tbsp vinegar

Preparation

Step 1

Preheat oven to 350 degrees
Season the steaks by sprinkling pepper and salt over each side and pressing it in.
Place large skillet over medium heat adding margarine and allowing it to melt
Place steak on the skillet allowing it to sear for 1 to 2 minutes on each side. Repeat for each steak.
Place steaks on an ovenproof platter and place in the oven, making sure oven is on a low temperature to ensure steaks stay warm through the rest of the cooking
Add onions to the pan and allow them to cook for 2 minutes
Add mushrooms giving 2 minutes to cook, pour Worcestershire sauce and mustard in pan. After 1 minute, add vegetable stock.
When serving, top steaks with mushroom mixture

French Fries:
Pour vegetable oil in a pot, filling it a few inches and heating it to 300 degree
Toss potatoes in the oil and leave for 5 minutes
Remove potatoes and drain
Turn heat up to 400 degrees and place potatoes in the oil
Sprinkle Salt over fries

Coleslaw:
Combine all ingredients in a bowl
Toss cabbage while dressing with mayonnaise and vinegar
