Vidalia Onion Pie

Ingredients

  • 2 1/2 cups, Vidalia or sweet onion
  • 2 eggs
  • 3/4 cup, milk
  • 3 Tbs. butter
  • 2 Tbs. veg. oil
  • 1 cup, Ritz cracker crumbs
  • 1/4 cup, cheddar cheese (sharp)
  • Salt and pepper to taste

Preparation

Step 1

Crush cracker crumb and put in 8 in. pie pan. Pour melted butter over crumbs and press into pan. Bake at 350 degrees for 8 min. Brown onions in veg. oil. Pour onions into cracker shell. Mix eggs, milk, salt and pepper. Pour into pie crust over onions. Put cheese on top. Bake at 350 degrees for 45 min.
