Ingredients
- 1 1/2 to 2 c walleye filets, cooked and flaked
- 1/4 c mayo
- 1/4 c celery, finely chopped
- 1/4 c red onion, finely chopped
- 1 1/2 T parsley, chopped
- 3/4 tsp red wine vinegar
- salt and pepper to taste
- 4 slices rye bread, slightly toasted
- 8 slices tomatoes
- 8 slices Swiss cheese
- Parsley chopped for garnish

Preparation
Step 1
Preheat broiler.
In bowl mix walleye, mayo, celery, red onion, parsley, vinegar, salt and pepper.
Spread walleye mixture on slice of rye bread then place 2 tomato slices and 2 slices cheese on walleye mixture and place on cookie sheet. Put under broiler until golden brown.
