Pronto Taco Soup

Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 cans (14 1/2 oz) beef broth
  • 1 can (14 1/2 oz) diced tomatoes undrained
  • 1 can corn, drained
  • 1 1/2 c. picante sauce
  • 1 c. spiral or shell pasta
  • 2 tsp chili powder
  • 1 medium green pepper, chopped
  • 1 tsp dried parsley flakes
  • 1 pkg taco seasoning
  • Shredded cheddar cheese, sour cream and tortilla strips

Preparation

Step 1

In a large saucepan, cook beef, onion and garlic over medium heat until meat is no longer pink. Add taco seasoning, broth, tomatoes, picante sauce, pasta, green pepper, chili powder and parsley.

bring to a boil, stirring occasionally. Reduce heat, cover and simmer for 10-15 minutes or until past is tender.

Garnish with cheese, tortilla chips and sour cream.
