Ingredients
- 2 envelopes unflavored gelatin
- 2 cups cran-raspberry juice
- 1/3 cup sugar
- 1 cup club soda
- 1/4 cup creme de cassis liqueur (optional)
- 1 tsp lemon juice
- 1 tsp fresh grated orange pool
- 3 cups assorted blueberries, raspberries, or strawberries
Preparation
Step 1
In medium saucepan, sprinkle gelatin over 1 cup cran-rasp berry juice; let stand 1 minutes. Stir over low heat until gelatin is completely dissolved, about 5 minutes. Stir in sugar until dissolved.
In large bowl, blend remaining 1 cup cran-raspberry juice, soda, gelatin mixture, liqueur, lemon juice and orange peel. Chill, stirring occasionally, until mixture is consistency of unbeaten egg whites; about 60 minutes. Fold in berries. Pour into 6 cup mold or bowl; chill until firm, about 3 hours. Unmold and serve, if desired, with sour cream.
