Spinach Frittata

Ingredients

  • 4 cups baby spinach leaves
  • 4 eggs, beaten
  • 4 tbsp Mexican style shredded cheese
  • 4 slices bacon, cooked and chopped
  • 2 tbsp chopped onion
  • Salt and Pepper to taste

Preparation

Step 1

Cook spinach and 1 tbsp water in medium nonstick skillet sprayed with cooking spray on medium heat for 4-5 minutes or until spinach is tender, stirring occasionally.


Mix remaining ingredients; pour over spinach. (DO NOT STIR)

Cover; cook 5 minutes or until center is set.

Note: the uncooked spinach will generously fill the skillet but will cook down quickly.
