Ingredients
- 1 cup flour
- 1/2 cup whole wheat flour
- 2/3 cup oats
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 2/3 cup sugar
- 1/4 cup butter, softened
- 1/3 cup dark molasses
- 2 eggs
- 1 cup mashed banana, about 2 bananas
- 1/3 cup lowfat yogurt, banana yogurt good sub
- 1 teaspoon vanilla
Preparation
Step 1
1. Heat oven to 350.
2. Combine flours-salt.
3. Beat sugar-molasses until well-blended. Beat in eggs one at a time. Beat in banana-vanilla until blended. Beat in flour just until moist. Spoon into 8" sprayed loaf pan.
4. Bake 1 hour and 5 mins, or until tester tests clean. Cool 10 mins in pan on rack, then out of pan on rack.
