Ingredients
- 1 tbsp. of margarine
- 1/2 cup of flour
- 1/2 cup of milk
- 2 eggs, slightly beaten
- 1/4 tsp. of salt
- 2 tbsp. of margarine
- 2 cups of broccoli flowerettes
- 1 cup of red onion cut in 1 inch pieces
- 1 cup or 1 mediam green pepper
- 1 cup or 1 medium tomato
- 1/4 tsp. of salt
- 1/4 tsp. of pepper
- 11/2 cups of shredded cheese
Preparation
Step 1
Heat oven to 425*.In a 9" pie pan melt 1 tbsp. of margarine in the oven for 2 to 3 mins. In small bowl, stir together flour, milk, eggs and 1/4 tsp. of salt. Pour into pie pan with melted margarine.Bake 12 to 15 mins. or until golden brown.
In a skillet, melt 2 tsbp of margarine.Add the remaining ingredients except the cheese. Cook over medium heat stirring occasionally until veggies are crispy and tender-- 12 to 15 mins.Sprinkle half the cheese on the bottom of the pancake.Top with vegetable mixture. Sprinkle with remaining cup of cheese.Return to oven and continue baking for 5 to 7 mins. or until cheese melts
