GROUND****Ground Turkey and Peppers

02/03/15 - Good for both. I may have liked it a bit more initially than Dan did but he seemed to warm up to it and he did eat it all. It's also easy enough to pull together on a week night as long as you have the ingredients and thawed ground turkey.

Ingredients
- 2 tablespoons Olive oil
- 1/2 red onion, diced
- 1 bell pepper (red, yellow, orange or combination), chopped
- 1 jalapeno pepper, minced (optional - my addition)
- 2 cloves garlic, sliced or minced
- Kosher salt
- 1 lb ground turkey
- 1 teaspoon chipotle powder or chili powder (or to taste)
- [you could also season the ground turkey with chili powder or chopped pickled jalapenos instead of the chipotle powder]
- 2 Tbsp chopped fresh parsley or cilantro (if you have it)
Preparation

Heat 1 tablespoon olive oil in a large skillet (not non-stick) on medium high heat. Add the chopped onions, sliced garlic, if using, and peppers and cook until onions and peppers are softened, about 5 minutes. Add the minced garlic, if using, and cook 30 seconds more.
When the vegetables are done, add a couple of tablespoons of chicken broth to the pan to scrape up the fond, then remove the vegetables from the pan and return them once the turkey has cooked. Add the other tablespoon of oil to coat the pan, if required. Put crumpled bite-sized chunks of ground turkey in the pan, sprinkle with salt and chipotle or chili powder.
Cook the turkey without stirring until it is browned on one side, then turn the pieces over to brown the other side. (This was a bit more difficult that it should have been, because the turkey was still half-frozen - I'm sure it would go easier with completely-thawed turkey) Once the turkey is *just* cooked through, stir in the onions and peppers, and sprinkle with more salt and chili powder to taste (easy here, you can always add more), if needed. Remove from heat. Stir in fresh chopped parsley or cilantro, if using.
Serve alone, or with steamed rice or noodles.
