Potato Pancakes

  • 4 cups frozen Hash Browns, thawed
  • 1 onion, diced
  • 3 tbsp flour
  • 4 eggs, beaten
  • 1/2 cup vegetable oil
  • 4 slices bacon, cooked and crumbled
  • Sour Cream
  • Chives
  • Applesauce

Preparation

Step 1

Preheat oven to 300. In large bowl combine hash browns, onion, flour, eggs, and salt and pepper to taste; mix well.

Heat oil in skillet. Drop 1/4 cup hash-brown mixture into oil. Cook until golden on each side. Transfer to baking sheet. Repeat with remaining hash browns. Keep warm in oven until ready to serve. Serve with bacon, sour cream, chives and/or applesauce.
