Baked Scallop Scampi

Ingredients

  • 5 tablespoons unsalted butter, divided
  • 1 lb sea scallops
  • 1/2 teaspoon kosher salt
  • Juice and zest of 1 lemon
  • 4 cloves garlic, coarsely chopped
  • 1 cup Panko bread crumbs

Preparation

Step 1

1. Preheat oven to 375°F. Prepare 9x9-inch baking dish with

1 tablespoon butter. Season scallops with salt and place in dish;

2. Preheat sauté pan on medium. Place remaining butter in pan,

add garlic; cook and stir 2-3 minutes. Add bread crumbs and zest; cook and stir 1-2 minutes more or until butter is absorbed and bread is slightly toasted.

3. Top scallops with bread crumb mixture. Bake 12-15 minutes or until scallops are opaque and firm and bread crumb mixture has browned. Serve over cheesy grits.

Grill: Preheat grill on medium high. Place 3-4 scallops on each

Broil: Preheat oven to broil. Season 1 lb scallops with salt and pepper. Place in single layer on baking sheet; broil 4-6 minutes or until scallops are opaque and firm.
