Ingredients
- 1/4 lb unsalted butter, softened
- 1 1/2 C sugar
- 4 eggs, seperated
- 1 C sour cream
- 2 tsp freshly squeezed lime juice
- 1 tsp grated lime zest
- 1/2 tsp almond extract
- 1 3/4 C sifted cake flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
Preparation
Step 1
Preheat oven to 325F. Butter and flour a 9x5x3 loaf pan.
Cream butter and sugar until light. Add egg yolks, sour cream; lime juice and zest, and almond extract. Contine beating until fluffy. Sift together dry ingredients and stir into the sour cream mixture. Beat the egg whites to soft peaks and gently fold into the batter.
Fill the pan three fourths with batter and bake for 50-55 minutes, or until a cake tester comes out clean. Remove from pan and cool on rack.
