BLACK BEAN SALSA

Ingredients

  • 1 -15 oz can black beans, rinsed and drained
  • 1-medium cucumber, peeled, seeded and chopped
  • 1 medium tomato, seeded and chopped
  • 1/2 cup sliced green onions
  • 1/4 cup lime juice
  • 1 TBS finely chopped fresh cilantro
  • 1 TBS olive oil
  • 1/2 tsp ground cumin
  • 1/8 tsp salt
  • 1/8 tsp cayenne pepper

Preparation

Step 1

1. In medium bowl, stir together the black beans, cucumber, tomato, green onions, lime juice, cilantro, oil, cumin, salt and cayenne.

2. Cover; refrigerate 4-24 hours.
