Ingredients
- 1 -15 oz can black beans, rinsed and drained
- 1-medium cucumber, peeled, seeded and chopped
- 1 medium tomato, seeded and chopped
- 1/2 cup sliced green onions
- 1/4 cup lime juice
- 1 TBS finely chopped fresh cilantro
- 1 TBS olive oil
- 1/2 tsp ground cumin
- 1/8 tsp salt
- 1/8 tsp cayenne pepper
Preparation
Step 1
1. In medium bowl, stir together the black beans, cucumber, tomato, green onions, lime juice, cilantro, oil, cumin, salt and cayenne.
2. Cover; refrigerate 4-24 hours.
