Ingredients
- 1/2 cup red wine vinegar
- 1 garlic clove, minced
- salt and pepper
- 1 tbsp plus 1 tsp honey
- 2 tbsp olive oil
- 8 boneless skinless chicken breasts, cut into chunks
- 1 large red onion, peeled and cut into wedges

Preparation
Step 1
Preheat oven to 375 degrees. Stir together vinegar, garlic, salt, honey and oil in large bowl. Season with pepper. Add chicken and onion to bowl. Let stand room temp, tossing often, for 15 minutes.
Thread 6 pieces of chicken and 1 onion wedge onto 4 skewers. Transfer skewers and rest of onion wedges to baking sheet, drizzle rest of marinade on top. Roast until chicken is done, 35-40 minutes.
