Strip steak with chimichurri

Ingredients

  • 1/2 red onion, minced
  • 1/3 cup flat leaf parsley, chopped
  • 1 tbsp oregano
  • 1 tbsp minced garlic
  • 1/3 cup olive oil
  • 3 tbsp red wine vinegar
  • 1/2 tsp red pepper flakes
  • salt and pepper
  • 2 New York strip steaks (about 1 lb each)

Preparation

Step 1

Mix all ingredients (not steak) in a bowl. Season with salt and pepper. Let stand, 15 minutes.
Season both sides of steaks. Place in large skillet. Cook over medium until browned and crust has formed, about 4 minutes. Turn steaks and cook 2 more minutes for medium rare.
Transfer steaks to a cutting board, let rest 10 minutes. Slice crosswise into 1/2 inch pieces. Spoon 1 tbsp sauce over each serving.
