Seven minute frostin

Ingredients

  • 1 1/2 cups plus 2 tbsp sugar
  • 2/3 cup water
  • 2 tbsp corn syrup
  • 6 egg whites, room temp.

Preparation

Step 1

Combine 1 1/2 cups sugar with water and corn syrup in small saucepan. Clip candy thermometer to side. Bring to a boil over medium high heat, stirring often, until sugar dissolves. Boil without stirring until reaches 230 degrees on thermometer.
In bowl of mixer, whisk egg whites on medium speed until soft peaks form. Add 2 tbsp sugar with mixer running.
Once syrup reaches 230 degrees, remove from heat. with mixer on medium-low speed, pour syrup down side of bowl in slow steady stream. Raise speed to high, whisk until completely cool and stiff, 10-20 minutes. Use immediately.
To flavor, add extract once frosting is done, whisking to combine.
