Ingredients
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup sweetened shredded coconut
- 1 1/2 sticks butter, room temp
- 1 1/2 cups sugar
- 2 eggs plus 2 egg whites
- 1 1/2 tsp vanilla
- 3/4 cup unsweetened coconut milk
Preparation
Step 1
Preheat oven to 350 degrees.
Whisk together flour, baking powder and salt. Pulse shredded coconut in food processor until fine, whisk into flour mixture.
In mixer, beat together butter and sugar until fluffy. Gradually add in eggs and egg whites and vanilla, mixing well between. Add flour mix in 3 batches, alternating with coconut milk, beating well.
Bake 15-18 minutes. Let cool completely.
