Ingredients
- 1/2 lb. can of salmon (broken up with bones and skin removed)
- 3 tbsp butter
- 1/2 tsp salt
- 1/2 cups milk
- 3 tbsp flour(I use cornstarch)
- 3 eggs(separated)
- 1/2 cup cooked peas

Preparation
Step 1
Melt butter, blend in flour and salt. Add milk slowly. Stir until smooth & thick. Add egg yolks, beat well. Add salmon. Add peas. Fold in beaten egg whites.
Pour into greased casserole. (You can place in pan of hot water).
Bake at 350 degrees F for about 30-45 minutes. A knife will come out clean when souffle is done.
