Spaetzle*

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup milk
  • 2 eggs
  • 1/2 teaspoon ground nutmeg
  • 1 pinch ground white pepper
  • 1/2 teaspoon salt
  • 1/2 gallon water
  • 1/2 gallon chicken broth
  • 2 tablespoons butter
  • 2 tablespoons chopped fresh parsley

Preparation

Step 1

Pour water and chicken broth into medium size pot, and bring to a simmer.
Mix together flour, salt, white pepper, and nutmeg.
Beat eggs well, and add alternately with milk to the dry ingredients.
Mix until smooth.
Take a spoonful of the dough and using a teaspoon "cut" a small amount away; the size os a peanut, with the tip of the teaspoon and drop a few at a time into the simmering (not boiling) liquid.
Cook gently 10 to 15 minutes.
Drain well.
Toss with butter and parsley.
Serve
