Caramelized Onions in a Slow Cooker

Ingredients

  • 3 to 5 pounds yellow onions (4 to 5 large onions)
  • 3 tablespoons extra-virgin olive oil or melted butter
  • 1/2 teaspoon salt
  • 4-quart to 6-quart slow cooker

Fill the cooker with enough sliced onions to make it 1/2 or 3/4 full, about 3 to 6 onions depending on the size of your slow cooker. Put the lid on, set the timer for the longest, slowest time allowed, and let those onions simmer away.
