CRABMEAT-STUFFED MUSHROOMS

Ingredients

  • 3/4 cup (1 1/2 sticks margarine or butter, divided)
  • 3/4 cup chopped yellow onions
  • 3/4 cup chopped fresh mushrooms
  • 1/4 tsp salt
  • 1/8 tsp cayenne
  • 1 1/2 tsp granulated garlic
  • 1/4 pound clawmeat
  • 1 1/2 TBS chopped green onions
  • 1 1/2 tsp parsley flakes
  • 1 TBS fresh Italian bread crumbs
  • 24 fresh jumbo mushroom caps
  • grated Parmesan cheese

Preparation

Step 1

1. In medium saucepan, melt 4 TBS butter. Saute onions and chopped mushrooms in butter. Cover and simmer 15-20 minutes over low heat. Stir frequently. Add salt, cayenne pepper and garlic, Stir. Add crabmeat. Cover and simmer 12". Add green onions, parsley flakes and bread crumbs. Mix well.

2. Fill each mushroom cap w/ stuffing. Melt remaining 1/2 cup butter and pour into baking dish. Place mushrooms in dish. Broil on high 4". If mushrooms have been refrigerated, broil on high for 8". Sprinkle w/ Parmesan before serving.
