Ingredients
- 1 pound halibut, cod or red snapper fillets
- 2 Tbsp. lemon juice
- 1 Tbsp. chopped onion
- 1 Tbsp. chopped pimiento
- 1 Tbsp. coarsely chopped pimiento-stuffed olives
- 1 Tbsp. capers
- 1 Tbsp. olive or vegetable oil

Step 1
If fish fillets are large, cut into 4 serving pieces. Place fish in ungreased square baking dish, 8x8x2 inches. Mix remaining ingredients; spread over fish. Cover and refrigerate at least 1 hour, turning once.
Heat oven to 350 degrees F. Cover and bake 20 to 30 minutes or until fish flakes easily with fork.
