Peanut Butter and Jelly Cupcakes

Ingredients

  • 1 3/4 cups flour
  • 1/4 tsp baking soda
  • 3/4 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 sticks butter, room temp
  • 1 1/3 cups sugar
  • 2/3 cup creamy peanut butter
  • 3 eggs
  • 1 tsp vanilla
  • 1/2 cup sour cream, room temp
  • 3/4 cup chopped salted peanuts
  • strawberry jelly or jam for topping

Preparation

Step 1

Preheat oven to 350 degrees.
Whisk together flour, baking soda, baking powder, and salt.
Ina mixer, cream butter and sugar until fluffy. Add peanut butter, mix well. Add eggs, one at a time. Add vanilla. Add flour mix in 2 parts, mixing well each time. Add peanuts and sour cream.
Bake for 18 minutes.

When cooled, cut out center using apple corer. Reserve tops. Fill with jelly, replace tops. Frost with peanut butter frosting and dollop jelly on top.
