Ingredients
- 7 oz feta cheese
- 1 egg, lightly beaten
- a small bunch of fresh mint, parsley or dill, very finely chopped (optional)
- 16 sheets filo pastry
- 3 Tbsp. melted butter or oil
Preparation
Step 1
Preheat the oven to 350 degrees F. For the filling, mash the feta cheese with a fork and mix with the egg and the herbs, if using.
Take the sheets of filo out of the packet only when you are ready to use them, as they dry out easily. Keep them stacked up in a pile. Lightly brush half of the top sheet lengthways with melted butter or oil and then fold it in half to make a long, narrow strip. Brush the top of the folded strip with butter or oil.
Take a heaped tsp. of filling and place it at one end of the strip in a thin sausage shape along the short edge - about 1 in. from it and the 2 long edges.
Roll up with the filling inside, turning the long edges in about half way through rolling to enclose the filling. Repeat with the rest of the filo and filling.
Place the cigars close to each other on a greased baking tray and brush the tops with melted butter or oil. Bake in the preheated oven for 30 minutes, or until crisp and golden.
